Gluten-Free Battered Fried Chicken

Using The Really Great Food Company All-Purpose Flour & Cornbread Muffin Mix

YOU WILL NEED:

  • 2 cups RGF All-Purpose Flour
  • 1/2 cup Cornbread Muffin mix
  • 2 lbs chicken (whatever style you prefer)
  • 1 cup milk, buttermilk seltzer or yogurt
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • 4-6 cups oil for frying
3 separate bowls required
DIRECTIONS:
  1. Dip chicken in bowl #1 with 1 cup All-Purpose Flour
  2. Dip chicken in bowl #2 with 1 cup milk, buttermilk, seltzer or yogurt
  3. Dip chicken in bowl #3 with 1 cup All-Purpose Flour, 1/2 cup cornbread mix and all spices.
  4. Fry in hot oil at 375* for about 10-15 minutes, turning occasionally
  5. Drain on paper towels. Enjoy as it is, or with your favorite sauce
