Gluten-Free Tortilla
Using The Really Great Food Company All-Purpose Flour
YOU WILL NEED:
- 4 cups RGF All-Purpose Flour
- 1 1/2 teaspoons salt
- 1 2/3 cups hot water
- 1/4 cup vegetable oil
DIRECTIONS:
- In a large bowl whisk together flour & salt
- Add the water and vegetable oil. Using your hands, combine the dough together until it is in the shape of a ball and all of the liquid has been absorbed. If the dough is too sticky, add 1 tablespoon flour. If needed, continue adding 1 tablespoon at a time. The dough should have the consistency of play-doh.
- Move dough to lightly floured work surface and knead dough, about 1 minute until it becomes smooth.

Divide dough into balls. Should yield about 12. Cover dough balls with a clean kitchen towel and allow them to rest for 15 minutes
- Heat a large non-stick pan or skillet over medium/medium-high heat.
- While skillet is heating, roll tortillas into 8-inch circles, using a bit of flour to prevent sticking. Place 1 tortilla into hot skillet and cook until it bubbles a bit, and brown spots start to appear on the bottom side. Should be between 30 seconds to minute, depending on the thickness of the tortilla and the heat of the pan. Repeat for all tortillas.
- Serve immediately or store in a tightly covered container
