Gluten-Free Chocolate Chip Pound Cake

Using The Really Great Food Company All-Purpose Flour


YOU WILL NEED:

 

  • 2 cups RGF All-Purpose Flour
  • 12 tablespoons unsalted butter
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 4 large eggs
  • 1/4 cup whole milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups mini semi-sweet chocolate chips

 

Preheat oven to 350*

 

DIRECTIONS:

  1. Flour & butter an 8 x 4″ loaf pan
  2. Add the butter & sugar to a stand mixer with paddle attachment. Cream together until light & fluffy, about 2-3 minutes
  3. Add in the vanilla, eggs & milk until fully combined
  4. Add in the flour, baking powder and salt until just combined
  5. Fold in chocolate chips (put aside a handful).
  6. Pour batter into the loaf pan and sprinkle the remaining chips on top.
  7. Bake for 55-60 minutes
