Gluten-Free Chocolate Chip Pound Cake
Using The Really Great Food Company All-Purpose Flour
YOU WILL NEED:
- 2 cups RGF All-Purpose Flour
- 12 tablespoons unsalted butter
- 1 cup sugar
- 1 tablespoon vanilla
- 4 large eggs
- 1/4 cup whole milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups mini semi-sweet chocolate chips
Preheat oven to 350*
DIRECTIONS:
- Flour & butter an 8 x 4″ loaf pan
- Add the butter & sugar to a stand mixer with paddle attachment. Cream together until light & fluffy, about 2-3 minutes
- Add in the vanilla, eggs & milk until fully combined
- Add in the flour, baking powder and salt until just combined
- Fold in chocolate chips (put aside a handful).
- Pour batter into the loaf pan and sprinkle the remaining chips on top.
- Bake for 55-60 minutes
