Gluten Free Cornbread Cranberry Scone
Using The Really Great Food Company Cornbread Muffin Mix
YOU WILL NEED:
Cake
- 1 1/2 cup RGF Cornbread Muffin Mix
- 1/4 cup butter or butter replacement
- 1/4 cup coconut milk w splash of apple cider vinegar
- 1/4 cup dried cranberries soaked in apple cider vinegar
- Pinch of salt
- 1 tablespoon chia seeds covered in water
Preheat oven to 350*
DIRECTIONS:
- Mix all ingredients together in a bowl
- Line a baking sheet with parchment paper
- Scoop out dough into 6 large rounds onto 9″ x 13″ pan

Bake 30-35 min until golden brown

Cool for 10 minutes. Slice, serve & enjoy
