Gluten Free Cornbread Cranberry Scone

Using The Really Great Food Company Cornbread Muffin Mix




  • 1 1/2 cup RGF Cornbread Muffin Mix
  • 1/4 cup butter or butter replacement
  • 1/4 cup coconut milk w splash of apple cider vinegar
  • 1/4 cup dried cranberries soaked in apple cider vinegar
  • Pinch of salt
  • 1  tablespoon chia seeds covered in water


Preheat oven to 350*



  1. Mix all ingredients together in a bowl
  2. Line a baking sheet with parchment paper
  3. Scoop out dough into 6 large rounds onto 9″ x 13″ pan
  4. Bake 30-35 min until golden brown
  5. Cool for 10 minutes. Slice, serve & enjoy
