Gluten-Free Red Velvet Cake
Using The Really Great Food Company Chocolate Cake Mix
YOU WILL NEED:
Cake:
- 1 package RGF Chocolate Cake Mix
- 1 cup sour cream
- 3 eggs
- 1/2 cup water
- 1/4 cup oil
- 1 ounce bottle red food coloring
- 1 teaspoon vanilla extract
Frosting:
- 1 (8-ounce) package cream cheese, room temperature
- 8 tablespoons butter, room temperature
- 3 3/4 cups confectioners sugar, sifted well
- 1 teaspoon vanilla extract
DIRECTIONS:

Preheat oven to 350 degrees. Grease 13″ x 9″ cake pan or two 9″ round cake pans(if you want to layer) or spray with cooking spray, and lightly flour
- In a large bowl, combine cake mix, sour cream, water, oil, food coloring, eggs and vanilla. Mix with an electric mixer on low for 1-2 minutes. Scrape sides, then mix again for 2-3 more minutes
- Place batter into cake pan or pans and bake for about 30 minutes. Remove from oven and let cool for 10-15 minutes.
- Run knife around the edge of each layer, turn each layer upside down on wire rack, then right side up onto another rack. Cool completely, at least 45 minutes
- For the frosting, put cream cheese and butter in large bowl. Mix with electric mixer about 30-45 seconds
- Add confectioners sugar a little bit at a time, mix on low speed until sugar is totally blended. About 1-2 minutes.
- Add vanilla, mix on medium speed until fluffy. About 1-2 minutes more
- Place 1 cake layer on serving platter, spread top with frosting. Place second layer on top, finish by frosting the top and sides. If not layering, simply frost top and sides of entire cake.
