Gluten-Free Cheesy Calzone
Using the The Really Great Food Company All-Purpose Flour Mix
YOU WILL NEED:
Dough
- 2 cups RGF All-Purpose Flour (plus a little extra to work the dough)
- 1/4 teaspoon salt
- 1 packet yeast
- 3/4-1 cup water
- 2 tablespoons oil
- 1 tablespoon spices
Filling
- 16 oz. Ricotta Cheese
- 4 oz. Mozzarella Cheese
- Sprinkle of salt & pepper
Preheat oven to 475*
DIRECTIONS:

In a large mixing bowl place all flour, salt and yeast in the bowl, on one side place salt on other side place yeast

Add 3/4 c water and mix on medium (paddle attachment) for 2 to 3 minutes until sticky

Add oil spices and beat 2-3 minutes. Then add a bit more water to keep it sticky
- Oil a 12” pan and a piece of parchment. Keep separate

With the extra flour, begin to work the dough. With your hands, gently knead dough for 2-3 minutes. Then press out dough to circle shape keeping it on floured surface and careful not to press hard

Move dough onto parchment paper and place ingredients on one side of dough
- Using parchment paper fold other half over top of ingredients pressing edges together. Place on baking sheet
- Brush the top with oil and make two slashes on the top of the calzone to allow steam to escape
- Bake 20-25 minutes. Remove from oven when golden brown. Serve with marinara sauce. Enjoy!

(1) – 12″ pan
