Gluten-Free Peanut Butter Cookies

Using The Really Great Food Company All-Purpose Flour


  • 1 1/2 cups RGF All-Purpose Flour
  • 1/2 cup unsalted butter, room temp
  • 1 cup peanut butter
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temp
  • 3/4 teaspoon baking powder
  1. Preheat oven to 35o degrees. Sift flour and baking powder. Whisk to combine.
  2. Using an electric stand mixer with paddle attachment, cream butter and sugar together. Add peanut butter and mix until combined
  3. Mix in egg and vanilla extract. Add flour mixture and beat until incorporated.
  4. Roll dough into 1″ thick balls. Place on baking sheet lined with parchment paper
  5. Flatten cookies with a fork in cross-cross pattern. Bake for about 8 minutes. Allow cookies to cool completely on baking sheet. Enjoy!
