Gluten Free Baked Blueberry Doughnuts

Using The Really Great Food Company All-Purpose Flour

 


YOU WILL NEED:

  • 2 cups RGF All-Purpose Flour
  • 2 eggs or egg replacer(we like flax or apple sauce)
  • 2 1/2 teaspoons baking powder
  • 4 tablespoons butter or earth balance
  • 1/2 cup milk or milk replacement
  • 1/4 cup orange juice
  • 2 tablespoons oil
  • 3/4 cup sugar
  • 1/2 cup blueberries
  • Pinch of salt
DIRECTIONS:
  1. Add dry ingredients & blueberries into a bowl.
  2. In small separate bowl, add orange juice and milk. Let sit
  3. Beat eggs, oil, sugar, & butter in a separate bowl until combined.
  4. Add dry ingredients to wet, then add milk + orange juice combo. Blend until combined
  5. Butter 6 doughnut hole pan. Fill & bake at 375* for 15-22 minutes
  6. Cool for 5 minutes, flip onto cooking rack
*For drizzle*

2T blueberry jam
1 c powdered sugar

  1. Mix until blended
  2. Drizzle over cooked donuts
