Gluten Free Pina Colada Muffins
Using The Really Great Food Company Vanilla Muffin Mix
YOU WILL NEED:
- 1 package RGF Vanilla Muffin Mix
- 2 large eggs or egg alternative
- 1 cup pineapple juice or 14 oz crushed pineapple, drained
- 1/4 cup coconut flakes
Preheat oven to 350*
DIRECTIONS:
- Grease muffin pan with vegetable shortening , oil or use muffin cups
- Separately beat eggs in a mixing bowl. Add pineapple juice and coconut flakes to the eggs and beat together.
- Add entire package of muffin mix to wet ingredients and beat for 1 minute.
- Spoon batter into muffin cups. Bake 22-26 minutes
*Makes roughly 8-10 3-oz muffins.
