Gluten-Free Lemon Squares

Using The Really Great Food Company All-Purpose Flour

YOU WILL NEED:

Crust

  • 1 1/2 cups RGF All-Purpose Flour
  • 1/2 cup sugar
  • 3/4 cup unsalted butter, frozen & cut into pieces

Filling

  • 1 1/2 cups sugar
  • 1/4 cup RGF All-Purpose Flour
  • 4 large eggs
  • 3/4 cup lemon juice
  • 1 tablespoon lemon zest
DIRECTIONS:
  1. Preheat oven to 35o degrees. Line baking pan with parchment paper or grease with cooking spray.
  2. For the crust, add the sugar, flour and butter to a food processor. Mix for about 20-30 seconds or until combined. Press into pan and bake for about 22-25 minutes
  3. For the filling, combine all filling ingredients in large bowl. Mix well until combined and sugar is dissolved.
  4. Whisk just before pouring onto crust and then bake for 30 more minutes. Remove before it starts to brown.
  5. Sprinkle with powdered sugar before cutting and serving. Store lemon bars in refrigerator
