Gluten-Free Lemon Squares
Using The Really Great Food Company All-Purpose Flour
YOU WILL NEED:
Crust
- 1 1/2 cups RGF All-Purpose Flour
- 1/2 cup sugar
- 3/4 cup unsalted butter, frozen & cut into pieces
Filling
- 1 1/2 cups sugar
- 1/4 cup RGF All-Purpose Flour
- 4 large eggs
- 3/4 cup lemon juice
- 1 tablespoon lemon zest
DIRECTIONS:

Preheat oven to 35o degrees. Line baking pan with parchment paper or grease with cooking spray.
- For the crust, add the sugar, flour and butter to a food processor. Mix for about 20-30 seconds or until combined. Press into pan and bake for about 22-25 minutes
- For the filling, combine all filling ingredients in large bowl. Mix well until combined and sugar is dissolved.
- Whisk just before pouring onto crust and then bake for 30 more minutes. Remove before it starts to brown.
- Sprinkle with powdered sugar before cutting and serving. Store lemon bars in refrigerator
