Gluten-Free Chicken & Waffles w/ Hot Honey
Using the The Really Great Food Company Gluten-Free All-Purpose Flour
YOU WILL NEED:
Waffles
- 1 1/2 cups RGF All-Purpose Flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 2 tablespoons sugar
- 3/4-1 cup milk or water(or mixed)
Chicken
- 2 cups RGF All-Purpose Flour
- 2 lbs chicken breast cut into strips
- 1/2 cup milk or water or 1 egg + 1/4 cup water
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon black pepper
- 1/8 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon garlic
DIRECTIONS
Step 1 – Waffles
- Combine all ingredients in a bowl. Allow to rest 10 minutes while heating waffle iron
- Place 2 tablespoons batter into each waffle iron
- Allow to cook until golden brown
- Remove from iron and let cool
Makes 6-8 waffles
*make double batch and freeze when cooled
Step 2 – Chicken
- Place 3 bowls side-by-side. Heat pot of oil or deep fryer.
1st bowl – 1 cup RGF All-Purpose flour.
2nd bowl – 1/2 cup milk or water or 1 egg + 1/4 cup water.
3rd bowl -1 cup RGF All-Purpose flour + 1/8 teaspoon each cayenne, black pepper and paprika + 1/4 teaspoon each salt and garlic
- Dip chicken strips into each bowl. Makes sure each piece is covered.
- Fry covered chicken strips for 5-7 minutes.
- Remove from oil and drain until needed
- Place chicken over waffles. Serve with honey or syrup and enjoy!
*Hot Honey(optional)
Blend ½ c honey & 1/8 t hot pepper seeds or pepper sauce
