Gluten Free Chimichanga
Using The Really Great Food Company All-Purpose Flour
YOU WILL NEED:
- 1 cup RGF All-Purpose Flour
- 1 cup Tigernut Flour
- 3/4 cup water, milk or seltzer
- 1 tablespoon oil
- 1 teaspoon salt
- your choice of meat, cheese, veggies, rice, beans
DIRECTIONS:

Mix all ingredients together in a bowl

Make 6 round balls. Roll each ball out between 2 pieces of plastic wrap into 6-8″ flat discs
- Heat skillet, tortilla press or non-stick pan. Lightly oil. Place 1 tortilla at a time and cook 2-3 minutes, flip and cook for another 30 seconds. Make sure to keep tortilla flexible. Set aside in tinfoil until all are done.
- Fill with meat, cheese, veggies, rice and beans of your choice. Roll as a burrito.

Heat oil in a deep-fryer or large saucepan at 375 degrees.

Cook the chimichangas seam side down first until they are crisp and golden brown on both sides. About 1 minute on each side.

Top with sour cream, guacamole or salsa. Serve and enjoy!
