Gluten-Free Red Velvet Cupcakes

Using The Really Great Food Company Chocolate Cake Mix




  • 1 package RGF Chocolate Cake Mix
  • 1 cup sour cream
  • 3 eggs
  • 1/2 cup water
  • 1/4 cup oil
  • 1 ounce bottle red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder


  • 1 (8-ounce) package cream cheese, room temperature
  • 8 tablespoons butter, room temperature
  • 2 cups confectioners sugar, sifted well
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine cake mix, sour cream, water, oil, food coloring, eggs, cocoa and vanilla. Mix with an electric mixer on low for 1-2 minutes. Scrape sides, then mix again for 2-3 more minutes
  3. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full. Bake for about 30 minutes. Remove from oven and let cool for 10-15 minutes.
  4. For the frosting, put cream cheese and butter in large bowl. Mix with electric mixer about 30-45 seconds
  5. Add confectioners sugar a little bit at a time, mix on low speed until sugar is totally blended. About 1-2 minutes. Add vanilla, mix on medium speed until fluffy. About 1-2 minutes more until smooth.
  6. Spread muffin tops with frosting. Enjoy
