Gluten Free Zucchini Bread

Using The Really Great Food Company Golden Cake Mix



  • 1 package RGF Golden Cake Mix
  • 1 cup eggs or egg alternative (approx. 4 large eggs)
  • 3/4 cup water
  • 3/4 cup oil
  • 2 cups zucchini, shredded


Preheat oven to 350*



  1. Mix eggs and water together in mixing bowl.
  2. Add oil and shredded zucchini.
  3. Add entire package of golden cake mix to wet ingredients and beat at medium speed for 1 ½ minutes or until smooth.
  4. Pour batter into greased and floured pans
  5. Bake 40-45 minutes. Let cool 3 minutes before removing from pan



  • (2) 8” x 4” loaf pans
